டோபு வறுவல்


Spicy tofu stir fry :

Ingredients :

For tofu fry :
Tofu - 1 (14-ounce) package extra-firm light tofu
garlic clove -2 minced
fresh ginger - 1/2 teaspoon
sweet chili sauce - 1 tablespoon
oil - 1 tablespoon
soy sauce - 1 tablespoon
sesame seeds - 1 tablespoon


For Stir-Fry:

2 tablespoons oil
garlic clove -2 minced

6 cups chopped vegetables(bell peppers, celery, carrots, onions, mushrooms, broccoli)


For Sauce:

1/3 cup hot water

3 tablespoons vinegar

3 tablespoons soy sauce

1 tablespoon sweet chili sauce

1 tablespoon cornflour

1/2 teaspoon crushed red pepper flakes

Method :

Preheat the oven to 400 degrees Fahrenheit. Drain the tofu thoroughly. Cube tofu into inch cubes. In a large bowl, toss tofu with garlic, ginger, sweet chili sauce, oil, soy sauce, and sesame seeds. Place on a sheet pan and bake until firm on the outside and tender on the inside, approximately 30 minutes. Stir often. Remove from oven and set aside.


In a large pan, heat oil until hot. Add garlic and stir. Add remaining vegetables and sauté until tender. In a small bowl, whisk together the hot water, vinegar, soy sauce, sweet chili sauce, cornflour, and red pepper flakes. Pour onto vegetables and toss to coat. Simmer until thickened, 3 to 5 minutes. Add in tofu.

Serve with pasta or rice. Garnish with green onions.





அவகாடோ பச்சடி


Avacado Dip :
Ingredients needed :
ripe avacado - 1
green chilli - 1
mustard seeds - 1 spoon
curd - 1 cup
perungayam - pinch
curry leaves - 1 arc.

Method :
peel the avacado and remove the seed.
mash the pulp.
grind this pulp with 1 green chilli.
mix this with the curd.
add the salt as needed.
in a pan add a little oil.
add the mustard,perungayam and curry leaves.
once the mustard cracles put this in the curd.
now the dip is ready to eat.

மிளகு சம்பா (மீதமான சாதத்தில் செய்வது)

Milagu samba
ingredients needed :
rice - 1 cup
ghee - 2 spoons
black pepper - 2 spoons
cumin seeds - 1 spoon
curry leaves - 1 arc
perungayam - pinch
salt - as needed

Method :
in a kadai add ghee.
fry the pepper and cumin seeds.
add the curry leaves and perungayam.
add the rice to it and check for salt.
fry a little till the aroma comes out.
now it is ready to eat.
this is a simple tiffin with leaftover rice.
especially during rainy days it is very good to eat.

சிப்போட்ட்லே லைம் ரைஸ் மற்றும் கிரேவி


chipotle style lime rice and gravy (Indian style and method) :

Lime Rice :

Ingredients

1 cup Basmati rinsed lightly in cold water
1 tsp oil or butter
1 lime
1/2 tsp sugar
about 3 tbsp cilantro
salt to taste

Method

Soak the rice in some water for 15 minutes to avoid it getting mushy!

In a kadai, in low heat, add the butter/oil along with rice and sugar. Let the rice get coated with the oil. Once the rice gets aromatic add juice of 1 lime. Stir for a minute.Add 2 cups of water and salt – cover and cook for about 10-15 minutes.
Check to see if the rice has absorbed all the water.
Stir it lightly and add chopped cilantro. You can add more if you like. Taste and add more lime juice if required. Remove from flame, fluff the rice lightly and let it sit for 1-2 minutes with the lid on.
I served it along with red Beans gravy. This rice goes very well with spicy and hot dishes. The flavors are simple though they burst with the freshness of lime and aroma of cilantro.

Beans Gravy :

Ingredients
red kidney beans - 1 cup
garam masala - pinch
big onion -1
green chillies - 2
tomato - 2 or tomato pulp 2 scoops
curry leaves and cilantro to garnish

method :

Soak the red beans for 5 hours.
pressure cook it with salt and garam masala.
add oil in kadai.
add mustard seeds.once it cracles add green chillies and onion.
then add tomato pulp.
add salt.once cooked add the beans and mash a half.
once cooked garnish with cilantro.

Serving:

ingredients :

onion - 1
bell pepper small - 3 in different colours
corn shells-cooked 1/2 cup
Ching's All in one stir sauce - 1 spoon
(you can get this in indian grocery shop )
sour cream - needed(optional)
cheese - 1/4 cup

method:
in a kadai add oil.fry the onion and bell peppers.only they have to be half cooked.
add the corns and a spoon of all in one stir sauce.
let it keep aside.

in a bowl take a small cup of lime rice.
to this add a scoop of the bell pepper gravy.
add the cheese,sour cream and the red beans gravy.

it is a very health dish.
i made as per indian style and taste.
it comes good.

சத்துமாவு கஞ்சி


Saththumaavu gruel :

In the hurry world giving breakfast to kids is big process.
Always they refuse to eat.
to give them a nutricious food is a must.
you can give this gruel to them.
Even elders and babies (6 months and above)can have this.
it is healthy and tasty.
Since we can get most items in flour it is easy to prepare at home itself.
we used to have this gruel as breakfast.My kid loves this.
now a days i am tension free at morning.

Ingredients :
Rice flour - 1 cup
Wheat flour - 1 cup
kambu(Millet) flour-100 gm
Ragi(Finger Millet or Kelvaragu) flour - 1 cup
Greengram(pachhai payiru) flour - 1 cup
Corn (Cholam) flour - 1 cup
potuukadalai(porikadalai)(Roasted split Chickpeas) - 1 cup
Nila kadalai(peanut) - 1/3 cup
Poppy seeds - Kasakasa - 1/5 cup
Cardamom - Elakkai - Few
Almond - Badam (Optional) - 10
Cashew - Mundhiri - 10
Procedure
Fry all the flours lightly and separately.
fry lightly pottukadalai and peanut.
powder them in mixie or blender.
fry poppy seeds,cardamom,almond and cashew.
powder them in mixie or blender.
Mix all the flour together.
Store it in an airtight container.

Gruel:

Boil 2 cups of water (adjust water based on your taste. Add more water if you want the gruel to be watery).
Take 3 Tsp of Nutritious powder and mix with little amount of water and then add it to the boiling water.
Keep mixing (see to that lumps are not formed). .
The powder will boil and thicken. Switch off the stove.
Add milk and sugar (as per your taste). You could alternatively add Buttermilk and salt. Enjoy the gruel :)

பால் போளி


Milk Poli Reciepe :
ingredients :
maida flour - 1 cup
salt - a pinch
milk - 2 cups
sugar - 1/2 cup
cardamon - 2 pieces
kunguma poo - a pinch
ghee - 1 spoon
Oil to fry

Procedure :

mix the flour, a pinch of salt, ghee together.make the dough with water.
the dough should be like that of poori dough.
make small pooris and fry in oil.
the oil should be kept in medium flame so that the poori should not turn brown.
keep the pooris aside.

Boil the milk.
add the sugar,cardamom and kunguma poo.
put the poorisin it and keep aside.
after 1 hour you can serve this.

simple`and tasty dish.
kids like this.

HOme made Vegetarian Pizza - Simple method


HOme made Pizza - Simple method

Ingredients :

To make the base :

all purpose flour(maida flour) - 2 cup
dry yeast - 1 spoon
sugar - 1/2 spoon
olive oil - 2 spoon
water needed

To make the toppings :

bell pepper - 2
(you can have small bell peppers in different colour.it will give good look.kids will like to see.If you are in US you can get the mixed colour bell peppers in costco.it is around 2.50 $)

onion(big) - 2
garlic - 4 pods
mushroom - 2
olives - 10
jalepeno pepper - 6
pineapple - 5 pieces( optional)
tomato -4
you can add vegetables as per your wish

(olives,jalepeno is available in small bottles each cost 1.25$ and small packet shredded cheese for pizza is $1.99 and dry yeast is 3 small packets for $1.1 in walmart.you can use this for 3 times.)

procedure :

to make base :

mix the flour with 1 spoon salt and 3 spoon olive oil.
in 1/4 cup of luke warm water add 1/2 spoon sugar and 1 spoon yeast.mix it.keep it for 10 mins.it will raise.
add this water to the flour and mix it.
make the dough as that for chapathi by adding water as needed.
cover this with wet cloth and wait for 1 hour.
after 1 hour the flour will raise to double.
take it out and mix.again keep it for 1 hour.
take out and this is the base for pizza.

To make toppings :

you can use pizza sauce available at walmart for $1.50 or
you can simply made it as below.
in a kadai add oil.
cut 2 tomatoes and 1 onion and fry them in oil
cool it and grind it.this is your pizza sauce.
cut the remaining onion,tomato and bell peppers lengthwise.
in a kadai add oil.
fry the oinion, tomato,and bell peppers.add the garlic pods.
no need to fry for long.just to get rid the raw smell.
add a pinch of garam masala and chilli powder.
this is the topping.

in a pizza pan apply a liitle olive oil.
(you can get the pizza pan even in dollar store for one dollar)
make the dough into a big ball.
using rolling pin roll it like making chapathi.

apply the pizza sauce over it.
then put the topping we made using onion,bell pepper and tomato.
then add the olives,mushroom,jalepeno,pinaapple pieces and the cheese to it.

if u want you can add the pudhina leaves too.

preheat oven to 400 degree for 10 mins.
then keep the pizza in the oven for 20 mins at 400 degree.
check the base.if it is pale brown colour then it is done.
otherwise keep it for 5 more mins.
Eat and enjoy at home.
